The story of RLT Cuisine begins with a young Costa Rican driven by an insatiable passion for food, culture and global cuisine.
As a natural adventurer and artist, his destiny led him far from his hometown. He took a one way journey to Europe and immersed himself in kitchens that taught him technique, discipline and the value of an ingredient.
Four years, five continents and countless tales of culinary discovery later, he came back to his roots, reigniting his connection with the land, the sea and the people of Guanacaste.
The road less traveled is not always easy. But taking it makes all the difference. That is the spirit we bring to every table we set.
Each dish is a fusion of global inspiration and local authenticity. We could have opened a restaurant. We could have done catering like everyone else. Instead we went where the people are.
RLT Cuisine is a gastronomic event production company based in Playa Potrero, Guanacaste.
The Road Less Traveled started with a simple idea: that some of the best meals happen far beyond the walls of a restaurant.
We are a team based in Guanacaste, brought together by food, hospitality and a curiosity for the place we call home.
We cook from what surrounds us, the fishermen, farmers, growers, foragers, seasons and landscapes that make this part of Costa Rica unlike anywhere else. The menu follows the product, not the other way around.
Some nights that means four guests sitting across from our kitchen at the Food Lab. Other days, it means cooking in a private home, beside the ocean, aboard a boat or somewhere a dinner table probably wasn’t supposed to exist.
Different setting. Same intention.
Good ingredients. Generous hospitality. A little obsession. And a meal worth traveling for.
We cook with everything we have. We clean up and disappear. And we leave the kind of silence that only comes after a really good meal.
Every protein we serve has an origin we know and a story worth telling at the table. Playa Potrero is our home and our supply chain at the same time. We believe a cook can change a local economy simply by choosing to buy local. That belief is the business model, not a line in a brochure.
