We believe that one of the most respectful ways to prepare a fish is by carefully guiding the knife to create thin, perfect slices.

Each delicate slice is then marinated in local citrus juices, freshly grated ginger, and herbs that are picked daily.

We use the finest parts of the fish to satisfy the most meticulous palates allowing you to enjoy the perfect combination of flavors and textures.

Corn tostada

"CORN TOSTADA"

In Latinoamerica, corn was considered sacred. This is why we love to use corn as the main ingredient in our menus.

We prepare tostadas the same way our ancestors did and make each tostada by hand.

With an open fire, we get the corn tortilla crispy and use it as a vehicle to transport unique flavors. Our toppings change according to the season of our seas, but we always keep the quality and the tradition of the crispy tortilla tostada.

Catch of the day

CATCH OF THE DAY "GUACHO"

In Italy, they prepare risotto. In Spain, they make arroz caldoso, and In Costa Rica, we traditionally make arroz guacho.

Typically made in wood fire stoves, arroz guacho is one of the highlights of Guanacaste cuisine. In our version of this traditional dish, we slowly cook a fish bone broth that we later use to cook the rice.

This rice and fish dish is made with many other local flavors and spices that help make the dish come together.

We change our dessert menu weekly according to seasonal ingredients and harvest them from the tropical forest.

We use raw cacao from indigenous communities and seasonal tropical fruits to make our desserts.

Homemade sweets and gelatos are part of the repertoire of our chef creations.

While our petit fours vary during each experience, they are always fresh, tasty, and made with ingredients gathered from the tropical rainforest.

Petit Fours can sometimes be small bites of sweet cacao truffles, homemade chocolates, or candies.
