The Journey and Philosophy of Chef Gilberto Briceno

Born in Alajuela in 1993, Chef Gilberto Briceno grew up surrounded by the natural beauty of Costa Rica, with memories of picking water apples and jocotes, and enjoying family gatherings centered around food. His upbringing instilled in him an appreciation for a healthy lifestyle and the joy of sharing meals with loved ones. Inspired by his parents’ values, Chef Briceno dedicated himself to understanding the art of cooking, eventually earning a degree in gastronomy and a diploma from Le Cordon Bleu.

Driven by a desire to “get his hands dirty” and learn beyond textbooks, Chef Briceno traveled the world with little more than his knives and $200. Working in high-level kitchens globally, he gained a deep understanding of the culinary arts while developing his own vision. Through RLT Cuisine, Chef Briceno now shares his minimalist yet complex cooking style, using locally-sourced, wild ingredients to create flavorful dishes that reflect the soul of Costa Rica.

In our Food Lab, an intimate, four-seat restaurant, guests gather each evening around the kitchen counter as Chef Gilberto crafts meals that blend personal touches with sustainable storytelling.
